Gringo Brasilien Niquinho tastes extra good as espresso, the coffee beans are roasted a bit longer and darker, so that they get a little less acidity, but lots of sweetness and fullness.
This coffee comes from one of Gringo's big favorite´s on Brazil's coffee scene, Luiz Paulo Dias Pereira Filho. This time it is a Yellow Catuai from his farm Sítio Senhor Niquinho. The farm - which bears Luiz's grandfather's nickname - in addition to coffee trees also has original forest and water sources that are completely untouched.
Yellow Catuai, a variety that often shows itself from its best side if the beans are allowed to dry in their own fruit, because then the lively fruity sweetness in the coffee comes to full life.
The slow drying means a developed fermentation that makes it almost perfect as an espresso; here we find in the character a very soft acidity, caramel sweetness and a round fruitiness.
