La Pavoni Professional has no electric pump. Instead, the brewing pressure is created manually by lifting up and pressing down the lever, causing the piston to force the water through the coffee. You have full control of both the extraction time and the brewing pressure in order to get the desired result. The espresso machine also has a milk frother for preparation of cappuccinos.
The La Pavoni Professional model has a big 1.6 litre boiler. In addition, the La Pavoni Professional features a pressure gauge where you can check the boiler pressure.
