Cold Steeped Tea - aka Cold Brewed Tea
Have you tried making cold brew tea? No?
Well the method is similar to making cold brew coffee and means steeping tea in cold water, eliminating the water-heating process.
The cold steeping gives a smoother, cleaner and less bitter tasting tea with less catechins, tannins and caffeine, and while using cold water instead of hot, the tea retains more of its antioxidants and vitamin C when extracted from the leaves.
You can make cold steep tea with any tea; black, green, white, oolong, sencha, herbal and flavoured fruit teas. They will all steep well in cold water, only the steep time may vary. You can steep tea with tea leaves or even tea bags.
The standard in the tea industry is to measure one gram of tea for 50 ml of water, ie. 2 grams for 1 dl of water. A tea bag generally holds 1,8 - 2 grams of fine tea and makes a cup. The measurements vary a bit depending on taste and how strong you want your tea to be. In general, a teaspoon of loose tea per cup of water is standard, and a cup is roughly 2,5 dl.
Always check the tea package or the instructions for your tea maker for recommendations regarding tea vs. water ratio.
Instructions:
- Measure approximately 1,5-2 grams of tea per decilitre water. This makes 15-20 grams of tea for one litre of water.
- Place the chosen tea in the bottom of a tea bottle, pitcher or large container. Pour in cold or room temperature water.
- Cover the bottle, pitcher or container and put in the refrigerator. Let steep for 3-12 hours.
- If you are making cold tea with tea bags, remove the bags and discard them.
- Serve the tea over ice and garnish with fresh lemon, fruit, berries, herbs, spices or mint leaves and sweetener of your choice.
Steep times for different tea leaves
It is perfectly fine to just leave the tea to cold steep in the refrigerator overnight and not watch the clock, but if you want to experiment to find the optimal brew for your favourite teas there are some approximately tested and measured cold steeping times for different tea types.
- Black tea 8-12 hours
- Green & white tea 6-8 hours
- Oolong tea 8-10 hours
- Pu-erh tea 10-12 hours
- Herbal tea 12-14 hours
Taste, taste, taste!
Taste your steeped tea before serving. If you think it became too strong, simply add cold water or mix with soda, fruit juice or lemonade for a lovely summery beverage.
