Pulcina is the product of intense research into the optimisation of the shape of the Coffee pot in order to improve and enhance the organoleptic properties of coffee. Illy has identified the ideal shape that the water boiler should take to produce the perfect coffee.
Thanks to the internal shape of its special heater, Pulcina automatically stops filtering the coffee at the right moment. This interruption helps to eliminate the eruption phase, the final filtering stage that generates a burnt and bitter aftertaste, ensuring that only the finest qualities of the coffee are preserved and enhancing its full-bodied and rounded aroma.
The spout is quite pronounced. Its typical 'V' shape, reminiscent of a baby chick’s beak, is specially designed to perfectly cut drops when pouring.
Practical and functional, making coffee with the Pulcina is just like making it with a traditional coffee pot.
The pot is made of aluminium and does not work on induction hobs. Aluminium cannot be washed in a dishwasher.

Almost nectar-like espresso
I received excellent, precise instructions over the phone from a Crema employee for making outstanding espresso, which have been very useful with this stunning pot: similar instructions (most importantly, to heat the pot only on medium heat regardless of the heat source) are also included in the leaflet that comes with this pot, but to my surprise, the espresso instructions sent by Crema via email suggest turning the heat source to full! At least, I have always gotten terribly tasting espresso this way, and after mentioning this over the phone, I indeed got the insightful advice to use medium heat, so I'm very puzzled by Crema's contradictory email instructions!
This pot only has one downside: you need strong fingers to open it, as its completely round and relatively wide shape makes it more challenging to get a grip compared to, say, a regular Bialetti.
This "three cups" size brews about one Finnish coffee cup worth of coffee and does so with truly astonishing quality! I "broke in" this pot by brewing disposable coffees in it about 10 times and leaving the brewed coffee in it overnight, which completely removed the factory metal taste before the first actual drinking coffee.
I recommend this pot, it's quite different from standard moka pots and it's probably almost impossible to fail at brewing espresso with it, especially if you follow the medium heat instruction.
