Development of the outlet pipe
I appreciate Moccamaster's long history and the durability of their products, the availability of spare parts, robust construction, and great usability. We have two coffee makers. One is very old and the other is a few years old, purchased for our cottage. Both have an outlet pipe with 9 holes and no indentations at the mouth of the holes.
When brewing a small amount of coffee, the coffee grounds are at the bottom of the funnel. Although the water comes from the drip holes, the small streams converge before reaching the surface of the coffee grounds. As a result, a large water stream creates a deep crater in the coffee grounds, causing some of the grounds to rise to the sides of the funnel, and not all the grounds participate in the extraction. There are too much slightly wet coffee grounds on the sides, and the coffee is weak compared to the amount of coffee grounds used.
This motivated me to try modifying those drip holes into downward-facing cones. I made a simple tool and it took me about half an hour to modify the hole design. Even a small indentation prevents the effect of surface tension, causing the water streams to flow straight down. The impact was significant.
Encouraged by this, I wrote on a major hobby forum about the improvement I made. We have 14,000 members and have been active for almost 20 years. I was surprised when a member mentioned that such an outlet pipe could be obtained as a spare part from Moccamaster. I checked where I could get it and ordered two. They function the same way as the ones I modified myself.
I wonder why such a necessary change was made so late. I think the problem lies with brewing small amounts of coffee. The updated outlet pipe is still not optimal. Even two or three cups require their own coffee maker or a significant change in the structure of the Moccamaster outlet pipe. I will try that in the future.
One more fundamental change to coffee brewing when preparing several cups of coffee. For example, when making ten cups of coffee, all the water passes through the coffee grounds, even though half or less of the water amount extracts all the necessary flavor from the coffee grounds. The remaining water just extracts a bitter liquid from the grounds. You can test if you doubt it. Save and separately take the last cup of flowing coffee. It's bad and doesn't improve but worsens the previously brewed coffee.
The remaining water amount should be run separately hot in addition to the extracted portion.
This is what I've been doing for a long time when there are several people enjoying coffee.
