Gringo Nordic Las Moras is a wet-processed specialty coffee from family-owned farms in the Huila region of Colombia. It has an intensely fruity flavour with notes of ripe blackberries, gentle lactic acidity and bright citrus. The mouthfeel is creamy, with a long, fruity finish.

Carefully controlled fermentation

The coffee’s distinctive flavour profile is developed using a processing method created by coffee producers Jhoan Vergara of Finca Las Flores and Néstor Lasso of Finca El Diviso. The coffee first undergoes aerobic fermentation in the presence of oxygen, followed by anaerobic fermentation without oxygen. The Thermal Shock method is then used, with hot and cold water helping to control fermentation and preserve the coffee’s aromas.

Las Moras means “blackberries” in Spanish, reflecting the coffee’s distinctive berry character.
