Espoo Kahvipaahtimo Juicy Passionfruit coffee is just as the name suggests β juicy, tart, and filled with the character of passionfruit! The flavour profile also offers hints of molasses, lime, and subtle tones of chocolate.
Wine Yeast + Passionfruit Process
When the ripest berries of the Castillo variety arrive at the La Padera processing station, they first float in water tanks to separate low-density beans and foreign materials. The processing station operates with environmentally friendly methods and takes responsibility for sustainable production.
The whole coffee cherries then undergo a 72-hour anaerobic fermentation along with the pulp. After this, passionfruit and wine yeast are added to the fermentation containers. The passionfruit contributes juicy and fruity flavours to the coffee, while the wine yeast enhances fermentation by producing aromatic compounds that increase the complexity, depth, and acidity of the flavour.
The flavour fully develops 25 days after roasting.
